Roasted Corn and Chipotle Dip
Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients:
3 cups of grilled corn, about 4 ears
1 red pepper
1 jalepeño
1 small yellow onion
1/4 cup chopped chipotle peppers in adobo
1/4 cup chopped cilantro
1 cup shredded chedar cheese
1/2 cup sour cream or greek yogurt
1/2 cup mayonaise
Technique:
- Preheat oven to 350°
- Mix all ingredients together in oven safe dish
- Cover with tin foil and bake for 20 minutes or until warmed
